Use large servings or you’ll still be hungry.
Spread avocado with a knife on one side of large whole grain bread (ciabatta bread also delicious).

Spread butter on other side of bread.

Add chopped or whole lettuce leaf, dill green herb, chopped green shallots, two types of flat cheese (Bega cheese or mozzarella),sliced red tomato, sliced cucumber, sliced cold ham. This is the type of sandwich used by other people I know who kindly showed me how to make it.

If you want to make a sandwich made by cafes in Moruya, you can add sundried tomatoes, chopped capsicum, zucchini, chopped eggplant, add more fresh cheese, shredded chicken.

Heat sandwiches in a grill, oven or an electric sandwich press until the cheese and bread are golden brown.

Serve the sandwich with a side of sautéed mushrooms or an omelette made with butter (I prefer butter, not oil for cooking the mushrooms or omelette, as this is healthier and tastes better).
