Yields 6 servings.

Great as a main meal.

Optional: Serve with vegetables. To prepare vegetables, wash vegetables in cold water in a colander and dry them with paper towel. Chop vegetables with a knife.

You can use buttered asparagus, or your favourite vegetables such as carrots, potatoes, broccoli, tomatoes or mushrooms. You can roast or sautee the carrots, asparagus, potatoes (or sweet potatoes, yum), broccoli, capsicum, tomatoes in olive oil or butter.

I prefer mushrooms to be sautéed.

6 tablespoons lemon juice
2 tablespoons dried rosemary leaves
6 salmon filets
3 tablespoons olive oil
Salt to taste
2 lemon slices

Marinate the salmon filets with olive oil, lemon juice, salt and dried rosemary leaves.

Refrigerate the salmon for 30 minutes.

Bake in a preheated oven for around twenty minutes.

Serve with lemon slices. Enjoy. ^^

This post is scheduled to appear on my blog on 16th June 2016 9:30 pm.

Wiki How has an excellent online article on when you shouldn't volunteer, and what type of people make good volunteers.

You can Google it, but some of the best points are:

Ways to support victims of floods around the world, including Europe and Asia:

You can donate money, toiletries, clothes, first aid kits. Donate books and toys for children.

Money can be donated to Action Aid and Red Cross, which supports people after natural disasters.

Money can also be donated to Medicine Sans Frontiers (Doctors Without Borders). They do incredibly amazing work tending to sick and injured people.

Raise awareness and boost the signal. Tell others how they can donate or help.

Volunteer, but only if you can.

Thank you all so much for your kindness, heart and generosity. <3

If you're a US Florida local, you can save lives by donating blood at the blood donation centre One Blood. To donate blood, call 1.888.9 DONATE. You can also provide food and water for the donors. This is especially important as donating blood can leave people feeling very fatigued.

Thanks so much for your generosity, courage and support. <3

Rocky road recipe based on recipe at taste.com

I have actually used this recipe several times in the past. It's delicious! Worth trying! :-)

Cooking time: 10 minutes.

Preparation time: At least 2 hours

50 grams Marshmallows
200 grams of chocolate (dark, milk or white chocolate. You can mix different types of chocolate)
25 grams raisins
100 grams Almond or macadamia nuts
8 dried or fresh cherries cut into pieces and deserved

Heat chocolate in a large saucepan on stovetop on medium heat until chocolate melts. Be careful so chocolate doesn't burn.

Remove pan from stove.

Mix other ingredients into chocolate with a large spoon.

Spoon mixture into a large pan or baking tray. Cover pan/tray with cling wrap and refrigerate for at least two hours until mixture is solid and hard. Slice mixture with large knife.

And that's it! Serve and enjoy! :-)

Recipe is based on the one from e-book The Sauce Cookbook Dreams are Made of.

Makes about one cup sauce. Delicious with barbecued meat and vegetables.

One third molasses
1 cup pomegranate juice, either freshly squeezed or store bought
One third honey. Reduce the amount of honey if it's manuka honey. Manuka honey has a strong flavour.
1 dash black pepper or cayenne pepper. I prefer black pepper.

Stir ingredients in a pot on stovetop on high heat.Bring top boil ( this is when the sauce bubbles). Reduce stovetop temperature to low heat, simmer for 25 minutes.

Serve and enjoy!

How you can all help survivors of the 2015 terrorist attacks on Paris, Lebanon and Afghanistan:

You can donate to the Red Cross at their website www.red cross.org.donate/donation

Donations can be sent to Medicine Sans Frontiers (they work worldwide)

Feel free to follow or take part in hashtag#porte ouverte (porte ouverte means "open door"). Parisians use this to offer their homes as shelter. People from other countries also use this hash tag to offer temporary housing for French citizens stranded by plane delays or closed borders.

People in Paris can donate blood through the French National Blood Service or by using the Son du Sang a Paris app on their mobile phones: m.dondusang.net/smartphone/

Please also feel free to donate to local French emergency aid organisations such as Secours Populaire https://www.secourspopulaire.fr/don#.VkdNO3arTIV

And Secours Catholique Caritas France's website also accepts donations for the Paris attack survivors (I've already donated to that website today, so it works. The website accepts international donations. Website is in French).

For those in Paris, Facebook has activated its safety check feature.

This feature allows you to let family and friends know if you're alive, and or uninjured in a catastrophe /tragedy. https://mobile.facebook.com/safetycheck/paris_terror_attacks/?_rdr
Please keep in mind there are moderate Muslims who support Paris and condemn the the attacks by Isis. God bless you all. <3 I will try and find out how we can support the innocent survivors in Lebanon and Afghanistan who were also attacked by Isis. Your generosity and kindness is greatly appreciated.

Happy birthday to Jim C Hines for 15th April! :D
sunlit_music: (lauren bacall 06 by jordanna morgan)
I was excited to read Rise of the Souder Goddess, and it was well worth the wait. Rise of the Spider Goddess (The Prose Killer Chronicles) is the first novel Jim C. Hines ever wrote when he was 25. From the hilarious cover to the foreword apologising for the horror that awaits, you know you're in for a great time. Jim pokes fun at his own story, and there's good tips on writing. Bonus!

There's Mystery Science Theatre 3000-like hilarious comments thrown in too. I loved the asides on punctuation, grammar, plotting, world building and characterisation.

Spoilers ahead!

This book cheered me up and made me smile so much. I'm definitely happy I read this. :) I burst out laughing (with Jim, not at him) so many times, and had so much fun.

Rise of the Spider Goddess can be bought and downloaded as an e-book on Amazon and Kindle.

Cooking time: 1 hour 25 minutes.

Ingredients for lemon cake recipe:
125 grams butter
1 tablespoon finely grated or chopped lemon rind
1 cup (220 grams) caster sugar
2 eggs
1 cup (150 grams) self raising flour
Half a cup of plain flour (75 grams)
Half a cup of milk (125 milliletres)

Topping: 125 ml lemon juice and one quarter cup (55 grams) caster sugar

Preheat oven to moderate heat (160-180 degrees, fan forced). Grease baking tray/cake pan, and line the base with baking paper.

Beat butter, rind and sugar in a medium sized bowl with an electric mixer until light fluffy. Add eggs, one at a time, until combined.

Stir in sifted self raising and plain flours in two batches with the milk.

Spread mixture into pan/baking tray and bake in oven at 180 degrees for 30-45 minutes. Baking time varies depending on your oven. My oven took 25 - 30 minutes.

The cake will rise and the top and edges will be golden brown when it is ready.

For the topping, combine the lemon juice and sugar in a jug or large mug. Stir until sugar is dissolved. Pour topping over cake, allow cake to stand for 15 minutes.

Cake is suitable for freezing and refrigerating. It is unsuitable for heating in the microwave.

Serve and enjoy! :)

Note: You can also cook noodles separately and serve with the soup. :)

Storage: Store chicken and vegetables separately from the broth to prevent solids from becoming mushy. Store solids and broth in shallow/ low, small and airtight containers (with lids) to speed up cooling and prevent the spread of bacteria.

My review of Prisoner (Echo's Wolf) is here:

Prisoner is written by Lia Silver, and told from the hero's and heroine's viewpoints. It's set in the same world as Laura's Wolf (both books can be read together or separately). There's romance, comedy, great banter, suspense, and thoughtful discussions of PTSD and dyslexia. :)

Prisoner also has an Asian hero, shapeshifting werewolves, a kick arse heroine and breathtaking action. What's not to like? ;)

You can download it from Kindle or buy it from Amazon. Prisoner is book one of the Echo's Wolf series. I'm looking forward to reading the next two books when they come out!
