Stuffed capsicums recipe
Stuffed capsicums recipe.
I actually made this and ate it last Saturday. It was easy to make and delicious! It was also fun eating stuffed vegetables for some reason. It just looks festive.
Serves: 1-2 people.
Ingredients:
2 large capsicums (bell peppers)
Pinch of salt
Pinch of pepper
Garlic granules, or four cloves of minced garlic (one clove per half a capsicum)
Mozzarella cheese (amount depends on how much you want to use) - 2 tablespoons of cheese per half capsicum
500 grams of diced ham or bacon
500 grams Carrots and peas. These can be fresh or canned. 125 grams per half capsicum.
A dash of onion salt for each half capsicum (or one tablespoon of minced onions for each half capsicum).
Instructions:
Wash vegetables.
Pat vegetables dry with a paper towel.
Cut capsicums in half with a sharp knife on a plastic or wooden cutting board.
Fill each half capsicum with 125 grams of carrots and peas, 2 tablespoons of mozzarella cheese, 125 grams diced ham or bacon, garlic granules/ minced garlic, a dash of salt and pepper, onion salt (or one tablespoon of minced onions).
Place stuffed capsicums in a baking tray.
Bake stuffed capsicums in an oven at 350 degrees Celsius for 30 to 40 minutes. Check the capsicums after 20 minutes to see if the capsicums are ready, as all ovens are different and cooking times are different. The stuffed capsicums are ready when the cheese has melted and the capsicums and other ingredients are lightly browned.
